To develop this article, we spoke with Yenith Buitrago, a specialist in pastry, bakery, and owner of Antojito Houston, a company dedicated to making desserts, cakes, artisan bread and offers catering services for events.
She explained that we can use the coffee in different desserts. “It is a very noble product that adapts to different types of preparations depending on its concentration, and we can even use it in salty food since it gives aroma, flavor and intensifies the color in our dishes,” she said.
Among the classic desserts that contain coffee among their ingredients, she mentioned Tiramisu and Opera. However, she said that in Antojito Houston, coffee is used in profiteroles filled with bavaroise al café, chocolate cake, black cake (Venezuelan traditional Christmas cake), brownies, coffee mousse, coffee and chocolate cookies, jellies, among others. Everything depends on our ingenuity and imagination.
Regarding how to brew the coffee to be used in pastry, she indicated that she uses espresso and instant coffee. This will depend on the dessert to be prepared, on the concentrations and flavor profiles that are required for each preparation.
She also assured that coffee has a quality to intensify and deepen chocolate flavor, and gives her products aroma, intense flavor, and serves to reaffirm colors.

Recommended desserts for different types of coffee
On the companions that he usually recommends for each type of coffee, she described:
- For the Espresso: Black cake, chocolate cake with coffee, fruit cake, panettone.
- For the American: Bomb filled with vanilla cream, cinnamon roll, brownie, and tiramisu.
- For the Cappuccino: Orange cake, vanilla cookie, a vanilla cookie with chocolate chips.
- For the Mokaccino: Vanilla Cake, Ladyfingers, almond cookies, blueberries, and cream cheese.
- For the Latte: Chocolate Volcano.
- Cortado: Biscotti, cake with pecans, walnuts, or almonds.
